Instructions
Prepare the salmon: Lay out a large sheet of plastic wrap about 20 inches long and sprinkle it evenly with 2 tablespoons of everything bagel seasoning blend. Then, layer the 1 pound of thinly sliced smoked salmon on top by overlapping pieces to form a rectangle roughly 18 by 6 inches.
Make the cream cheese filling: In a small bowl, combine ¾ cup whipped cream cheese with 2 thinly sliced scallions and 2 teaspoons of fresh lemon zest. Stir the mixture until it is well blended and smooth.
Assemble the roll-ups: Using a spatula or spoon, spread the cream cheese mixture evenly over the entire surface of the salmon rectangle. About 2 inches from the bottom edge, lay the avocado and cucumber strips lengthwise across the salmon.
Roll into a log: Carefully use the plastic wrap to lift and roll the salmon slices over the filling, creating a tight log shape. Optionally, sprinkle additional everything bagel seasoning on top for extra flavor.
