This Smoked Salmon & Avocado Bruschetta is a delicious and elegant appetizer featuring crispy toasted French bread topped with a creamy avocado spread, smoked salmon, and fresh dill. It's perfect for entertaining or a sophisticated snack.

  • Total Time: 14 minutes
  • Yield: 8 servings

Ingredients

Base

  • 1/2 French bread, sliced and toasted (crostini)

Toppings

  • 8 oz smoked salmon
  • 1 ripe avocado
  • 2 tbsp Greek yogurt
  • 1 tbsp mayonnaise
  • 1/2 lemon, juiced
  • Few sprigs of dill, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat Broiler: Preheat your oven broiler on high to prepare for toasting the bread slices.
  2. Slice Bread: Slice the French bread into 1/2-inch thick pieces ready for toasting.
  3. Toast Bread: Place the bread slices on a baking sheet and position the rack about 6 inches below the broiler element. Broil the bread slices for about 1.5 minutes on each side until they are golden brown and crispy, watching carefully to prevent burning.
  4. Mash Avocado: In a bowl, scoop out the ripe avocado and mash it with a fork until smooth.
  5. Mix Spread: Add Greek yogurt, mayonnaise, and freshly squeezed lemon juice to the mashed avocado. Mix well to combine thoroughly.
  6. Season Spread: Season the avocado mixture with salt and pepper to taste. Adjust seasoning as preferred.
  7. Assemble Bruschetta: Spread a generous amount of the avocado mixture onto each toasted crostini.
  8. Add Salmon: Carefully drape a slice of smoked salmon over the avocado spread on each crostini, folding the salmon as needed to fit nicely.
  9. Garnish: Wash and finely chop the dill, then sprinkle it over the smoked salmon for a fresh flavor burst.

Notes

  • Keep a close eye while broiling the bread to avoid burning the crostini.
  • For a dairy-free version, substitute Greek yogurt and mayonnaise with vegan alternatives.
  • If fresh dill is unavailable, you can use fresh parsley or chives as a garnish.
  • Use a ripe avocado for a creamy spread; if not ripe, the texture will be less smooth.
  • Serve immediately after assembling to enjoy the crispiness of the bread.
