Total Time:6 hours 15 minutes
Yield:4 servings
Ingredients
Main Ingredients
4 pieces bone-in chicken thighs (skin-on for extra flavor)
1 cup dry white wine (Chardonnay works beautifully!)
2 tablespoons Dijon mustard
1 onion, finely chopped
2 cloves garlic, minced
2 cups chicken broth
2 teaspoons dried thyme
Salt to taste
Black pepper to taste
Fresh parsley for garnish
Instructions
Prepare the Slow Cooker: Lightly grease your slow cooker or spray with non-stick cooking spray to prevent the chicken from sticking.
Season the Chicken: Season the chicken thighs generously with salt and black pepper on both sides to enhance flavor before cooking.
Add Ingredients to the Slow Cooker: Place the seasoned chicken thighs in the slow cooker. Add the finely chopped onion, minced garlic, dried thyme, Dijon mustard, dry white wine, and chicken broth, spreading everything evenly around and on top of the chicken.
Cook: Cover the slow cooker and cook on low heat for 6 hours or on high heat for 3 to 4 hours until the chicken is thoroughly cooked and tender.
Serve: Carefully remove the chicken from the slow cooker, spoon some of the cooking liquid over the top, and garnish with fresh parsley before serving.
Notes
For extra flavor, brown the chicken thighs in a skillet over medium heat before adding to the slow cooker, but this step is optional.
If you prefer a thicker sauce, remove the chicken once cooked and thicken the sauce on the stovetop by simmering it until reduced.
Dijon mustard can be substituted with whole grain mustard for added texture.
