Ingredients

Fruit and Juice

  • 2 peaches, peeled, pitted and sliced
  • 2 cups peach juice
  • ½ cup fresh raspberries

  • 2 cups sparkling apple cider
  • Ice as needed
  • Mint leaves for garnish

Instructions

  1. Puree the peaches: Place the peeled, pitted, and sliced fresh peaches along with the peach juice in a blender. Blend until the mixture is very smooth to create a fresh peach puree.
  2. Add sparkling cider: Pour the sparkling apple cider into the blender with the peach puree and pulse one or two times just to combine. Avoid over mixing to preserve the cider's natural effervescence.
  3. Prepare glasses: Fill serving glasses with ice to keep the mocktail chilled.
  4. Pour and garnish: Pour the peach bellini mixture into the glasses over the ice. Garnish each glass with a fresh raspberry and a sprig of mint. Serve immediately and enjoy cold.
