Ingredients

2 peaches, peeled, pitted and sliced
2 cups peach juice
½ cup fresh raspberries
Other Ingredients
2 cups sparkling apple cider
Ice as needed

Instructions
Puree the peaches: Place the peeled, pitted, and sliced fresh peaches along with the peach juice in a blender. Blend until the mixture is very smooth to create a fresh peach puree.
Add sparkling cider: Pour the sparkling apple cider into the blender with the peach puree and pulse one or two times just to combine. Avoid over mixing to preserve the cider's natural effervescence.
Prepare glasses: Fill serving glasses with ice to keep the mocktail chilled.
Pour and garnish: Pour the peach bellini mixture into the glasses over the ice. Garnish each glass with a fresh raspberry and a sprig of mint. Serve immediately and enjoy cold.
Notes
For a sweeter mocktail, add a teaspoon of honey or agave syrup before blending.
Use chilled sparkling apple cider to keep the mocktail cold without needing too much ice.
If fresh peaches are out of season, frozen peaches can be substituted, thawed slightly before blending.
