Instructions
Prep the cauliflower grits: Steam or boil the cauliflower florets until tender, approximately 7 minutes. Drain thoroughly, then blend with the heavy cream, softened cream cheese, salt, and pepper until smooth and creamy.
Cook the shrimp: Heat olive oil in a skillet over medium heat. Add the minced garlic and sauté briefly until fragrant. Add the shrimp and cook until they turn pink and are cooked through, seasoning with Cajun seasoning, salt, and pepper during cooking.
Assemble the casserole: Lightly grease a 9×13-inch baking dish. Spread the creamy cauliflower grits evenly at the base. Layer the cooked shrimp mixture over the grits. Sprinkle the shredded cheddar cheese evenly on top.
