This hearty Keto Beef Stew is a low-carb comfort food packed with tender beef chuck and nutritious vegetables like cauliflower, mushrooms, celery, and green beans. Slow-cooked to perfection, it’s seasoned with thyme, paprika, and garlic for a savory flavor, making it a perfect warm and satisfying meal for keto diet enthusiasts.

  • Total Time: 8 hours 20 minutes
  • Yield: 6 servings

Ingredients

Main Ingredients

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 cup beef broth
  • 1 cup cauliflower florets
  • 1 cup mushrooms, sliced
  • 1 cup celery, chopped
  • 1 cup green beans, trimmed
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 2 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste

Instructions

  1. Brown the Beef: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the 2 pounds of beef chuck cubes and brown them on all sides, about 5-7 minutes, to seal in the flavor.
  2. Transfer to Crockpot: Once browned, transfer the beef cubes into your crockpot or slow cooker to begin the slow cooking process.
  3. Add Vegetables: Add the diced onion, minced garlic, cauliflower florets, sliced mushrooms, chopped celery, and trimmed green beans to the crockpot on top of the beef.
  4. Pour Broth and Season: Pour in 1 cup of beef broth, then sprinkle 2 teaspoons of dried thyme, 1 teaspoon paprika, and salt and pepper to taste over the ingredients. Stir gently to combine all the flavors.
  5. Slow Cook: Cover the crockpot and cook the stew on low heat for 7-8 hours, or on high heat for 4-5 hours until the beef is tender and the vegetables are cooked through.
  6. Serve: Once cooked, ladle the stew into bowls and serve hot. Enjoy this keto-friendly, comforting beef stew!

Notes

  • For more flavor, brown the beef in batches to avoid overcrowding the skillet.
  • You can substitute beef broth with bone broth for added nutrition.
  • Adjust seasoning at the end of cooking if needed to your taste preference.
  • If you prefer a thicker stew, you can reduce the cooking liquid by removing the lid during the last 30 minutes on high setting.
  • Freeze leftovers in airtight containers for up to 3 months.
