Yield:6 servings
Ingredients
Main Ingredients
2 lbs beef chuck, cut into 1-inch cubes
1 cup beef broth
1 cup cauliflower florets
1 cup mushrooms, sliced
1 cup celery, chopped
1 cup green beans, trimmed
1 medium onion, diced
3 cloves garlic, minced
2 tbsp olive oil
2 tsp dried thyme
1 tsp paprika
Salt and pepper to taste
Instructions
Brown the Beef: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the 2 pounds of beef chuck cubes and brown them on all sides, about 5-7 minutes, to seal in the flavor.
Transfer to Crockpot: Once browned, transfer the beef cubes into your crockpot or slow cooker to begin the slow cooking process.
Add Vegetables: Add the diced onion, minced garlic, cauliflower florets, sliced mushrooms, chopped celery, and trimmed green beans to the crockpot on top of the beef.
Pour Broth and Season: Pour in 1 cup of beef broth, then sprinkle 2 teaspoons of dried thyme, 1 teaspoon paprika, and salt and pepper to taste over the ingredients. Stir gently to combine all the flavors.
Slow Cook: Cover the crockpot and cook the stew on low heat for 7-8 hours, or on high heat for 4-5 hours until the beef is tender and the vegetables are cooked through.
Serve: Once cooked, ladle the stew into bowls and serve hot. Enjoy this keto-friendly, comforting beef stew!
Notes
For more flavor, brown the beef in batches to avoid overcrowding the skillet.
You can substitute beef broth with bone broth for added nutrition.
Adjust seasoning at the end of cooking if needed to your taste preference.
If you prefer a thicker stew, you can reduce the cooking liquid by removing the lid during the last 30 minutes on high setting.
Freeze leftovers in airtight containers for up to 3 months.
