Ingredients

Whipped Cottage Cheese

Instructions

  1. Prepare the base: In the bowl of a food processor or a high-powered blender, add the low-fat cottage cheese, sliced or chopped garlic clove, and lemon zest. Blend on high for 30 seconds to 1 minute, using a blender tamper or spatula to scrape down the sides as needed to ensure everything is evenly mixed.
  2. Add giardiniera: Add the drained giardiniera (do not rinse) to the mixture and blend again for another 30 seconds until well combined and smooth.
  3. Assemble and serve: Transfer the whipped cottage cheese mixture to a shallow serving bowl. Top with an additional 1/4 cup of giardiniera along with its oil. Sprinkle with chopped fresh parsley or green onion and fresh grated parmesan cheese if desired.
