A high-protein, flavorful cottage cheese giardiniera dip that combines creamy low-fat cottage cheese with zesty giardiniera and fresh lemon zest, perfect for a healthy snack or appetizer.
Total Time:10 minutes
Yield:6 servings
Ingredients
Whipped Cottage Cheese
1 (16 ounce) container low-fat cottage cheese
1 garlic clove, sliced or roughly chopped
1 small lemon, zested
3/4 cup Chicago-Style mild or hot giardiniera, drained (do not rinse)
Topping
1/4 cup giardiniera with oil (do not drain)
Optional: fresh grated parmesan cheese
Chopped fresh parsley or green onion
Instructions
Prepare the base: In the bowl of a food processor or a high-powered blender, add the low-fat cottage cheese, sliced or chopped garlic clove, and lemon zest. Blend on high for 30 seconds to 1 minute, using a blender tamper or spatula to scrape down the sides as needed to ensure everything is evenly mixed.
Add giardiniera: Add the drained giardiniera (do not rinse) to the mixture and blend again for another 30 seconds until well combined and smooth.
Assemble and serve: Transfer the whipped cottage cheese mixture to a shallow serving bowl. Top with an additional 1/4 cup of giardiniera along with its oil. Sprinkle with chopped fresh parsley or green onion and fresh grated parmesan cheese if desired.
Serving suggestions: Serve the dip with crackers such as Simple Mills or Triscuits, fresh cut vegetables, pita chips, or use as a spread on toasted sourdough with fresh herbs. It also pairs wonderfully as a dip for quesadillas or alongside roasted or grilled chicken or steak.
Notes
Use low-fat cottage cheese for a creamy texture and higher protein content.
Do not rinse the giardiniera to retain flavor and oils that add richness to the dip.
Fresh lemon zest adds brightness, but use sparingly to balance flavors.
Parmesan cheese and fresh herbs are optional but enhance the flavor and presentation.
This dip can be made ahead and refrigerated for up to 2 days; stir before serving.
Adjust the amount of giardiniera to control the level of heat and tanginess.
