Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease your baking dish with cooking spray or line it with parchment paper to prevent sticking.
  2. Blend Cottage Cheese: Add the full fat cottage cheese into a blender and blend until smooth, silky, and creamy, creating the base of your batter.
  3. Add Remaining Ingredients: Into the blender with the cottage cheese, add the eggs, sweetener of choice, vanilla extract, cornstarch or coconut flour, and lemon zest if using. Blend for about 30 seconds until the mixture is smooth and well combined.
  4. Prepare Baking Dish: Pour the smooth cottage cheese batter evenly into the prepared baking dish, spreading it out to ensure even cooking.
  5. Initial Bake: Bake the batter in the preheated oven for 15 minutes. The edges should begin to set gently while the center remains soft and slightly wobbly.
  6. Add Berries: Carefully remove the dish from the oven and sprinkle the berries evenly over the partially set batter. They will sink in slightly, which is ideal.
  7. Final Bake: Return the dish to the oven and bake for an additional 35 minutes. The top should become beautifully golden, the center will jiggle slightly, and the edges will puff gently.
