Ingredients

Bread & Butter

  • 2 slices thick, good quality white bread (crusty French loaf recommended)
  • 3 tablespoon butter melted
  • 1/8 teaspoon red pepper flakes

Cheese & Honey

  • 2 oz goat cheese crumbled
  • 2 oz white cheddar shredded (can substitute shredded mozzarella)
  • 2 tablespoon liquid honey divided in half

Instructions

  1. Infuse Butter: Melt the butter in a large saucepan on medium-low heat along with the red pepper flakes to infuse the butter with spice. Cook gently for about five minutes without letting it burn.
  2. Prepare Butter for Bread: Carefully transfer the melted butter to a small bowl and set aside the pan, do not wash it as you'll reuse it for cooking the grilled cheese.
  3. Butter the Bread: Use a pastry brush or the back of a spoon to spread the infused butter on one side of both slices of bread, you may not need all the butter.
  4. Heat the Pan: Place the pan back on the stove over medium heat preparing to cook the sandwich.
  5. Assemble the Sandwich: Place one slice of bread buttered side down on the pan. Add the crumbled goat cheese and shredded cheddar cheese on top, then drizzle one tablespoon of honey over the cheese. Top with the second slice of bread, buttered side out, forming the sandwich.
  6. Cook and Melt Cheese: Cover the pan with a lid to help melt the cheese. Cook for 5 to 7 minutes until the bottom slice of bread is toasted and golden brown and the cheese is melted fully.
  7. Finish and Serve: Drizzle the top of the grilled cheese sandwich with the remaining tablespoon of honey. Optionally sprinkle additional red pepper flakes if desired. Slice and serve immediately.
