A delicious and easy-to-make crustless cottage cheese breakfast quiche, packed with protein and customizable with your favorite veggies and meats. Perfect for a nutritious breakfast or brunch.

  • Total Time: 45 minutes
  • Yield: 6 servings

Ingredients

Base Ingredients:

  • 6 large eggs
  • 1 cup cottage cheese (full-fat or low-fat)
  • ½ cup shredded cheese (cheddar, Swiss, or feta)
  • ¼ cup milk (or heavy cream for a richer texture)
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ tsp garlic powder (optional)

Suggested Add-Ins:

  • ½ cup diced bell peppers
  • ½ cup chopped spinach or kale
  • ½ cup mushrooms, sliced
  • ¼ cup onions, finely chopped
  • ½ cup cooked bacon, ham, or sausage

Instructions

  1. Preheat & Prepare the Dish: Preheat your oven to 375°F (190°C). Grease a 9-inch pie dish or 8×8 baking dish with nonstick spray or butter to prevent sticking.
  2. Mix the Egg Base: In a large bowl, whisk together the eggs, cottage cheese, shredded cheese, milk, salt, and pepper. Stir in garlic powder or any other desired seasonings for extra flavor.
  3. Add Your Mix-Ins: Fold in your choice of chopped veggies, meats, and herbs evenly into the egg mixture. Pour the entire mixture into the prepared baking dish and spread it out evenly.
  4. Bake the Quiche: Bake in the preheated oven for 35 minutes until the quiche is golden on top and fully set in the center. Check doneness by inserting a knife into the middle; it should come out clean.
  5. Cool & Serve: Allow the quiche to cool for 5-10 minutes before slicing. Serve warm or let cool completely for meal prepping and storage.

Notes

  • Use full-fat or low-fat cottage cheese based on your dietary preference.
  • You can substitute milk with heavy cream for a richer texture and flavor.
  • Add your favorite vegetables or cooked meats to customize the quiche to your liking.
  • Be sure to grease the baking dish well to avoid sticking since this is a crustless quiche.
  • Let the quiche rest a few minutes after baking to help it set for cleaner slices.
