  • 3 Tbsp. extra-virgin olive oil

Instructions

  1. Preheat Oven: Set your oven to 375ºF to prepare for roasting the dates.
  2. Prepare Dates: Using a small sharp paring knife, slice each Medjool date lengthwise without cutting all the way through. Carefully open the dates and stuff each with 1 to 2 teaspoons of softened goat cheese.
  3. Arrange Dates: Place the stuffed dates evenly in a 9×9-inch baking pan, round cake pan, or a small baking sheet, ensuring they are easy to bake uniformly.
  4. Make Walnut Topping: In a small bowl, combine the very finely chopped walnuts, minced fresh rosemary, orange zest, fresh orange juice, ground cinnamon, sea salt, and extra-virgin olive oil. Mix thoroughly until well blended.
