Yield:6 servings
Ingredients
Vegetables
2 medium zucchinis, sliced
1 cup spinach, chopped
1 red bell pepper, diced
1 cup cherry tomatoes, halved
Dairy and Eggs
1 cup cottage cheese
2 large eggs
1 cup shredded mozzarella (divided)
½ cup grated Parmesan
Seasonings and Others
2 tbsp olive oil
1 tsp dried oregano
½ tsp garlic powder
Salt and pepper to taste
Fresh basil or parsley, for garnish
Instructions
Preheat and Roast Vegetables: Preheat your oven to 375°F. Toss the sliced zucchinis, diced red bell pepper, and halved cherry tomatoes with olive oil, dried oregano, garlic powder, salt, and pepper. Spread them out on a baking sheet or in a roasting pan and roast for 15 minutes until they start to soften.
Prepare Cottage Cheese Mixture: In a medium bowl, combine the cottage cheese, eggs, and half of the shredded mozzarella cheese. Mix well until blended smoothly.
Assemble the Bake: Lightly grease a baking dish. Layer the roasted vegetables and chopped spinach evenly in the dish. Pour the cottage cheese mixture over the veggies, spreading it evenly. Then sprinkle the remaining mozzarella and grated Parmesan cheese evenly on top.
Bake the Casserole: Place the assembled dish into the preheated oven and bake for 30 to 35 minutes, or until the top is golden brown, bubbly, and set.
Rest and Serve: Remove the bake from the oven and let it rest for 10 minutes to set. Garnish with fresh basil or parsley before serving. Enjoy warm as a hearty and nutritious meal.
Notes
You can substitute any fresh vegetables you have on hand such as mushrooms, carrots, or broccoli.
For a lower fat option, use part-skim cottage cheese and mozzarella.
If you prefer a stronger flavor, add some crushed red pepper flakes or smoked paprika to the vegetable roasting mix.
This bake can be prepared ahead and refrigerated before baking; just add a few extra minutes to the baking time if baking straight from the fridge.
Make sure to let it rest after baking for easier slicing and better flavor development.
