Ingredients

Pasta

  • 250 grams Spaghetti

Vegetables and Herbs

  • 200 grams Button Mushrooms, cleaned and cut in half
  • 100 grams Oyster Mushrooms
  • 7-8 cloves Garlic, finely chopped
  • 1 1/2 teaspoons chopped Parsley

Other Ingredients

  • 1/3 cup Olive oil, divided
  • 1 teaspoon Chilli Flakes
  • 2 – 3 tablespoons Parmesan, grated
  • Salt, to taste

Instructions

  1. Cook the Spaghetti. Bring a large pot of salted water to a boil and cook the spaghetti according to package instructions until al dente. Reserve one cup of the pasta water and then drain the spaghetti.
  2. Sauté the Mushrooms. While the pasta cooks, heat two-thirds of the olive oil in a large skillet over medium heat. Add the button and oyster mushrooms and sauté until tender and lightly browned, about 5-7 minutes.
  3. Add Garlic and Chili Flakes. Add the chopped garlic and chili flakes to the skillet with the mushrooms and sauté for another 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Toss Pasta with Sauce. Add the drained spaghetti to the skillet along with the remaining olive oil. Toss well to combine, adding reserved pasta water spoonful by spoonful as needed to loosen the sauce and help it coat the pasta evenly.
  5. Finish with Parsley and Parmesan. Stir in the chopped parsley and grated Parmesan cheese, adjusting salt to taste. Give everything one last toss to combine all flavors.
  6. Serve. Serve the pasta immediately, garnished with extra Parmesan or parsley if desired.
